METHOD
1. Prepare the soba. In a pot, bring salted water to a boil. Add two hundred grams of soba noodles and cook according to the package instructions, usually about six to seven minutes. After that, drain the water and rinse the noodles under cold water to stop the cooking process.
2. Prepare the sauce. If you don’t have ready-made Japanese sesame sauce, in a small bowl, mix three tablespoons of tahini, one tablespoon of soy sauce, one teaspoon of honey, one tablespoon of vinegar, and a little water to achieve the desired consistency.
3. Assemble the dish. On a plate, elegantly arrange the soba, twisting it into a spiral shape. Drizzle the Japanese sesame sauce on top.
4. Add the crab meat. Carefully place eighty grams of crab meat on top of the noodles.
5. Garnish. Add two tablespoons of caviar on top and sprinkle with one tablespoon of orange zest for a pop of color.
6. Serving. Arrange the sliced cucumber and lollo rosso lettuce leaves next to the noodles for crunch and freshness.
